- Cook your chicken by boiling for 12 mins in water + chicken broth. Remove chicken, bring back to a boil and add noodles with enough water to cover. This gives your casserole even more flavor.
Here is what you’ll need
- 4 lbs chicken breast
- 16 oz spaghetti noodles
- Sharp cheddar cheese (shred your own, it melts better this way)
- 1 can of rotel tomatoes
- heavy cream or milk
- cream cheese
- cream of chicken
- chicken broth (optional)
- 8 oz velveeta cheese
First, boil your noodles
I like to boil my noodles with half water, half chicken broth. A chicken cube or chicken bouillon paste works too.
Next, cook your chicken
I find boiling my chicken to be easiest. I also use half water and half chicken broth for this as well. If you have time, cook chicken first and remove. Bring to another boil then add noodles with enough water to cover, cook until al dente or a little longer. Drain noodles in strainer then use the same bowl for the next step for a one pot clean up.
Now mix the chicken spaghetti mixture together
Now you will add your cream cheese, chicken, velveeta, cream of chicken soup, heavy cream, and rotel to a pot. Heat until cheese is melted then add your cooked noddles, mix until combined.
Lastly, pour chicken spaghetti mixture in a dish and top with cheese
Grease a 9×13 casserole dish then pour your chicken spaghetti mixture in. Top with cheese.

- 4 lbs chicken breast, boiled or rotisserie chicken
- 8 oz, veleeta cheese
- 6 oz, cream cheese
- 1/4 cup, heavy cream
- rotel
- 16 oz, spaghetti noodles
- 1 cup, shredded cheddar cheese
- cream of chicken soup
Instructions
- Cook noodles as directed on the package. Optional: add chicken broth to your water for extra flavor.
- Next, boil your chicken for 12 min or until done, or shred your rotisserie chicken.
- Add chicken, velveeta, heavy cream, cream cheese, cream of chicken soup, and rotel. Stir on low heat until cheese is melted.
- Add noodles to chicken mixture, toss to coat.
- Spoon into greased 9x13 baking dish and cover with shredded cheese.
- Bake at 350 until bubbly, or 20 mins.
