This fudgy chocolate zucchini bread in the bread machine is like nothing you have ever tasted. It’s simple ingredients and deep chocolate flavor will have you running back for more!
You can make zucchini bread and it will taste good? Why, anything you had chocolate chips too will taste good, my friend! Not only will it taste good, it is easy to do in a bread machine, from start to finish! No taking the dough out and baking in a loaf pan (of course, unless you want too)

Confession: Before this recipe, I had never tried zucchini bread. In fact, the only zucchini I ate was at the hibachi restaurant. You know, the one mixed in with so many other vegetables so you don’t really know which one you’re eating anyhow?
I did however hear of gardeners harvesting so much zucchini that they had ran out of things to make with it! Zucchini French fries, anyone?
I decided to grab some fresh zucchini from a farmers market and give it a go.
I only had one rule, there had to be chocolate involved and boy was there! Like a double dose of chocolate! This bread machine zucchini bread minus well be called double chocolate zucchini bread or maybe even chocolate zucchini cake.
Between the semi-sweet chocolate chips, the dutch-processed cocoa powder, and instant coffee expresso powder, it was a bound to make all my fudgy chocolate zucchini bread dreams come true.
Oh yeah, Can you tell that chocolate is one of my favorite things?
Ingredients

- 1/2 cup melted coconut oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/4 cup of sugar
- 2 cups of all purpose flour
- 1/3 cup natural unsweetened cocoa powder
- 1 tsp salt
- 1 1/2 tsp baking soda
- 1/2 tsp instant coffee expresso powder
added after the first mix cycle on the bread machine:
- 3/4 cup of semisweet chocolate chips
- 2 cups shredded zucchini (equal to 2-3 normal sized zucchinis)
How to make Fudgy Chocolate Zucchini bread in the Bread Machine
Start by adding the wet ingredients to your bread machine, then add in the dry ingredients. Reserving the shredded zucchini and chocolate chips for later.
Next, Select the setting for non-yeasted breads on your bread machine. On my bread maker, it’s called the “cake” setting, but it may be called something like quick bread, sweet bread or sweet quick bread on yours. Just make sure it is the setting that does not require yeast.
Then, hit the start button.
Most bread machines give off a beep when they are ready for you to add in your ‘mix ins’ such as fruits, nuts, etc. but some of the older machines, do not. If your machine tells you when to add in your ‘add in’s’, that is when you will add in the chocolate chips and shredded zucchini.
If your machine does not tell you when it is time to add in your extra ingredients, Add it in the first bread machine mixing cycle and before the second mixing (final mixing), This is when the machine “pauses” and the mixing paddle stops for several minutes between mixing cycles. Read your bread machine manual for more details.
TIP: Press a few extra chocolate chips into the top for a beautiful extra chocolate looking loaf.
Once the bread has finished baking, remove the bread pan from the machine, and allow it to cool for 10 minutes.
Then, carefully turn your chocolate zucchini bread out on a pan or wire rack.
Let the loaf cool completely; then, slice. Store in an airtight container.
Now that I know how absolutely wonderful zucchini is in bread recipes, I definitely want to try the traditional zucchini bread soon! This quick bread recipe almost reminded me of a chocolate banana bread.
How to shred zucchini?
This is a question I found myself wondering when I first made this recipe.
Slicing the tops off of the zucchini, you will then use the large holes of a box grater and shred the zucchini into small pieces.
You don’t need to peel the zucchini, or worry about squeezing excess moisture out of the shreds. All of that water is going to make your bread machine chocolate bread super moist.
Can I substitute the coconut oil for melted butter?
Normally, yes. Coconut oil and melted butter can be used interchanably at a 1:1 ration.
For this recipe, the coconut oil actually enhances the flavor by making the chocolate flavor more richer. So for this recipe, I would not recommend it.
Can you freeze this chocolate zucchini bread?
Have a lots of zucchini? You can defiantly freeze this chocolate zucchini bread for future use!
Just wrap it up tight with plastic wrap and aluminum foil, and stick it in the freezer. It’s best within 3 months.
Why use the bread machine to make chocolate zucchini bread and not the oven?
Although it takes a little longer, it is nice to have ‘cake’ or ‘quick bread’ made entirely hands off.
This is perfect for coming home too after church or for the little ones to help. Short recipe time + short attention spans = a good idea.
Plus, using a Bread Machine gives you the flexibility of making homemade fresh breads without the extensive time and work involved. Whether you use your bread machine to knead and bake an entire loaf, use the cake setting to make breads without yeast, or simply use it to knead and rise your dough only (basically fool proof) it is going to make your dreams of making homemade bread for your family a reality.

Does chocolate zucchini bread taste like zucchini?
Nope! Not even a little bit! This chocolate zucchini bread taste more like a big fudgy brownie.
I promise, your kids will never know they are eating a vegetable.
If I didn’t make this recipe and someone brought this to me, I would have no clue there was zucchini inside. Matter of fact, my kids have no idea they ate zucchini this week when I served this to them for an after school snack.
Recipe Tips
A few tips for this bread machine zucchini bread recipe:
- Check your bread machine settings to see whether you should use the ‘cake’ or ‘sweet bread’ setting. Each bread machine is different and some machines use the ‘quick’ bread setting to make yeast breads, not bread made with baking soda; or baking powder.
- Use a rubber spatula to get any of the extra mix off the sides of your bread machine before the bread starts baking.
- Let the bread cool completely before slicing or it could crumble to pieces. This could take up to 2 hours.
- Use a toothpick to check if your bread is cooked all the way through. If it is not cooked all the way through at the end of the cycle, you can use the ‘bake’ option on your bread machine to bake it a little longer.
